Quinoa (pronounced keen-wa) is a species of goosefoot that originated in the Andean region of South America, where it has been an important food for 6,000 years. This wonder plant, along with corn and potatoes, is a major food staple for the Andean cultures. The Incas considered Quinoa sacred, referring to it as "chisaya mama" or "mother of all grains".
In contemporary times, quinoa is highly appreciated for its nutritional value. Its protein content is very high (12%–18%) and unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it a complete protein source. It is a good source of dietary fiber and phosphorus, and is high in magnesium and iron. Quinoa is naturally gluten-free and considered easy to digest.
Quinoa flour is used for making breads, biscuits, cookies, crepes, muffins, pancakes, tortillas, and even beer. It may be used on its own in some baking, most commonly in breads or flat breads, or combined with other gluten-free flours, such as rice flour, to create a lighter baking mix.
