Stuffed Piquillo Peppers with Cheese Sauce

Dear friend of Gourmet Delights,

Piquillo Peppers can be stuffed with a variety of things including grains, nuts, cheeses, and various seafood (tuna, shrimp, crab), and of course combinations of all the above. Have fun experimenting with your favorite filling!

  • 12 Matiz Organic Piquillo Peppers
  • 1 small garlic clove, minced
  • 1 Tablespoon Veleta Extra Virgin Olive Oil
  • 6 coarsely chopped roasted almonds
  • 2 ounces rice
  • Maldon Organic Sea Salt
  • Ground Pepper to taste (we recommend Cubeb, Long, or Tellichery)
  • 1 1/3 cups of heavy cream
  • 4 ounces (about 1 cup) shredded Manchego or unsmoked Idiazábal cheese. Unsmoked as the piquillos are already smoky enough.
  • 2 Tablespoons dry sherry

Preheat oven to 425F.

Cook the rice per the directions on the package. Add the extra virgin olive oil, garlic, and almonds. Season with Maldon Organic Sea Salt and pepper to taste.

Take the piquillo peppers and stuff them gently with the rice/garlic/almond mix. Place the piquillos in a large shallow baking dish. Pour 1/3 cup of the heavy cream over the piquillos. Bake for 5 minutes until they are just heated through.

Put the remaining 1 cup of heavy cream into a small saucepan and bring to a boil. Add the grated cheese and simmer over low heat until the cheese completely melts. Remove from heat and add the 2 Tablespoons dry sherry. Taste and add salt and freshly ground pepper as necessary.

Pour the cheese sauce over the stuffed piquillo peppers and serve immediately.

Make ahead suggestion: stuff the piquillos the night before and refrigerate, covered, overnight. When you are ready, take them out of the refrigerator, warm them in the oven until they are just heated through. Make the cheese sauce just before serving, pour over the piquillos and enjoy.

The Organic Piquillo Peppers are $12.99 for a 7.6 ounce glass jar. Veleta Extra Virgin Olive Oil is $18.95 (16.8 ounces), Maldon Organic Sea Salt is only $8.95 (8.5 ounces), Marcona Almonds are $10.95 (3.5 ounces), and the outstanding Tuna Loins are $19.95 for a 7.8 ounce glass jar.
