Just in time for the 4th. Peas and Peas.

Pea shoots and pea flowers are in every menu this week!  Mermaid Farm has pea shoots and pea flowers, and do they make a dish!

Here is this week’s favorite breakfast:

4 slices bacon

1 onion cut in half and sliced thin

1 pound pea shoots (one bag from Mermaid Farm!)

4 local eggs

Start with some local bacon. Cook the bacon in a skillet, when cooked, place the bacon on a paper towel and keep the bacon grease in the pan. Add sliced onions and cook until cooked through.  Remove the onions and add chopped pea shoots.  Sauté until wilted.  Remove and place the cooked greens on 2 plates.  Crack 4 eggs in skillet and cook lightly. Flip the eggs and cook to your desired doneness.  Place onions on top of the greens, place the eggs on top of the onions and chop the bacon and sprinkle on top of the eggs!

Life is good! If you happen to have some pea flowers, they make a wonderful garnish.  We have been making a delicious Bean & Pea Salad and a Fresh Pea Soup - both are a perfect light, summer side or meal.

John Bagnulo and I are at it again.  We sure have a lot of fun together, sharing our information and learning from our participants.  We take all levels of fitness and all levels of eaters in our programs!  Really!  Whether you’re a marathon runner, health and nutritional nut, or a couch potato junk food junkie, we take each and every one of everyone wherever we all currently are, and take us all to the next step in the evolution of living with whole foods and healthier lifestyles.  I learn so much from each class we teach and we discover such good insights as we evolve together.  It is not to early to sign up for our October Fall Cleanse taking place in Edgartown.  You can also join our Restorative Adventure in Costa Rica in February!
