In this exciting class we will be tasting through a vertical of different vintage Ramona Ranch Cabernet Sauvignons along with Barrel samples aged in French, Hungarian or American Oak, while exploring and discussing the following concepts:
1-The attributes of Cabernet Sauvignon and why it is well suited to oak, tasting a 2012, 2013 and 2014 Ramona Ranch Cab.
2- We'll discuss the factors that impact how much oak, how long in oak, and the type of oak used and how to perceive these in the glass, comparing three 2015 Barrel samples, with either French, American Or Hungarian Oak influences.
3- We'll also compare barrel samples (unfinished wine) against finished wine. How does oak impact wine: taste how tannins, flavors, mouthfeel changes with time.
